Two savory pumpkin recipes for dinner that start with canned purée are Half Baked Harvest's sage brown butter pumpkin pasta Alfredo and Minimalist Baker's 1-pot pumpkin black bean soup. Each recipe uses 1 cup of pumpkin purée.
The pasta is a pumpkin, parmesan and gouda sauce tossed with a pound of fettuccine and topped with fried sage. Half Baked Harvest's recipe card lists 25 minutes and 8 servings. It uses a pot and a skillet at the same time, and the recipe says to eat it right away.
The soup cooks in one pot with sweet potato, coconut milk, cumin and lime. Minimalist Baker's recipe card lists 45 minutes and 4 servings. That time leaves out the optional chicken, which is boiled in a separate saucepan. The recipe says leftovers freeze for up to 1 month.

Pumpkin pasta Alfredo with brown butter, sage and gouda
Tieghan Gerard's sage brown butter pumpkin pasta Alfredo at Half Baked Harvest starts with the pasta water. Butter and whole sage leaves go into a large skillet over medium heat until the butter browns and the sage turns crisp, which the recipe puts at 4 minutes. The sage comes out and is kept for the top.
The heat goes down to low for chopped sage, garlic and a pinch of chili flakes. Then 1 cup of pumpkin purée and 1/3 cup of apple cider go in and simmer for 2 to 3 minutes. Gerard writes that the cider adds a sweetness that balances the richness of the sauce. Whole milk is whisked in slowly and simmered for 5 minutes, and parmesan, gouda and nutmeg are stirred in last. The drained pasta cooks in the sauce for 3 to 5 minutes.
Gerard's post suggests canned coconut milk for a sauce that is lighter on dairy, and in a comment reply she says you can use broth in place of the apple cider. Some readers in the comments report the milk separating into a grainy sauce. Replying to one, Gerard asks whether the milk was at room temperature and suggests heating it first or trying heavy cream.

Pumpkin black bean soup with coconut milk
Minimalist Baker describes its 1-pot pumpkin black bean soup as a fusion of Thai and Mexican cuisine. Onion goes into a large pot or Dutch oven first, then garlic, ginger and a seeded jalapeño, then diced sweet potato. The canned tomatoes, broth, cumin and chili powder go in, and the pot simmers, covered, until the sweet potato is tender, about 5 to 10 minutes. The coconut milk, pumpkin purée and drained black beans follow for another 5 to 10 minutes. Lime juice goes in at the end, and chopped kale or spinach is optional.
For a vegan version, the recipe says to leave out the chicken and double the black beans. Its ingredient list gives vegetable or chicken broth, so the vegan version uses vegetable broth.
With chicken, an 8-ounce breast is boiled in a separate saucepan for 15 to 20 minutes or until cooked through, then shredded. The 45 minutes on the recipe card doesn't include the chicken. The FDA's safe food handling guidance lists 165°F as the safe minimum internal temperature for poultry, as measured with a food thermometer, and says color and texture are unreliable indicators of safety.
Several adjustments are written into the recipe. Start with 1 cup of broth and go up to 2 for a thinner soup. Use more pumpkin for a stronger pumpkin flavor, or full-fat coconut milk for a creamier soup. The recipe says to serve it as is or with a grain, and the post suggests rice.
Minimalist Baker labels the recipe dairy-free and gluten-free. The canned tomatoes, broth, coconut milk and beans each carry their own label.
Canned pumpkin purée: can sizes and pie mix
Both recipes are written for canned pumpkin purée, and neither gives directions for starting from a whole pumpkin. Check the can before you buy. In its pumpkin FAQ, Libby's describes 100% Pure Pumpkin as pumpkin with nothing added, while its Easy Pumpkin Pie Mix already has spices and sugar in it.
Libby's says its 15-ounce can holds about 1¾ cups. That covers either dinner with about ¾ cup left over, and it is a little short of the 2 cups both would take. The 29-ounce can holds about 3½ cups.
As of October 2026, USDA's shelf-stable food chart lists pumpkin with other low-acid canned goods and gives them 3 to 4 days in the refrigerator after opening. Libby's pumpkin FAQ gives its pumpkin 1 week in the refrigerator in a sealed plastic container and up to 3 months in the freezer. This guide goes by USDA's shorter time: freeze what you won't cook within 3 to 4 days.
For the rest of the can, three breakfasts for leftover pumpkin purée compares a pumpkin French toast bake, pumpkin pancakes and mini pumpkin muffins. The muffins take ¾ cup.
Storing and reheating cooked leftovers
Minimalist Baker's soup recipe says cooled, covered leftovers freeze for up to 1 month and can be thinned with broth, water or coconut milk when reheated. Half Baked Harvest's pasta recipe says to eat it immediately and gives no storage or reheating directions.
The FDA's safe food handling guidance says to refrigerate perishable food within 2 hours of cooking, or within 1 hour if it's above 90°F outside. It lists 165°F as the safe minimum internal temperature for leftovers. USDA's leftovers guidance gives 3 to 4 days in the refrigerator for leftovers in general and says to reheat soups by bringing them to a rolling boil.

About Stasht
We built Stasht because we kept saving the same kinds of things this guide is full of: places from Instagram, TikToks worth trying, articles, recipes, events, and links we actually wanted to use later.
Stash something and Stasht pulls out the useful parts: places, dates, links, hours, notes, and context. Then those saves can show up on your map, in your calendar, in search, or in a roundup when they are actually useful.
